Our Saccharomyces cerevisae yeast is especially suited for fermenting red wine mashes under unfavorable conditions. It performs rapidly and steady, with high color preservation.

Advantages:

  • Produces no unwanted side products such as S02 , acetaldehyde, volatile and pyruvic acids.
  • Formation of fruity and complex esters.
  • Alcohol tolerance up to 16 vol%.
  • High color preservation and stability.

Shemer Dalia 08 is suitable for grape varieties such as Cabernet Sauvignon, Cabernet Franc, Merlot and many more red varieties.

It produces a complex, full-bodied and fruity style of wine with round tannins that emphasize the fruity flavors of the grape variety.
